Miami has an unexpectedly large smashburger scene. Specifically in Wynwood, you'll find half a dozen smashburger-specialized spots. I owe a lot of this to the popularity of Ted's (IYKYK). Since my last trip, a few new places popped up and got really popular. Cowy Burger is one of them, so I had it on my list before I got to Miami.

I was working from a coworking space nearby, so I could walk over for lunch. Cowy Burger is in the Wynwood neighborhood, which is pretty walkable. I walked into the relatively small space. About 1/3 of it was the counter and kitchen area, with the rest being small tables. I don't think there was even a single empty seat at any of the tables. This is a good sign, considering there are at least two other smashburger places on this very block. 

The line to order was a couple of people deep, and I was waiting for a friend to join. He came quickly, and we ordered. They gave us standing placards to identify where to drop our order off. The tables were moving, and people would get up pretty quickly after eating. No doubt, the folks hovering and waiting for tables might have sped some people up. We got seated, and our food came pretty quickly.

Waffle Fries at Cowy Burger

I ordered a side of waffle fries that come with "green sauce". It is Miami, after all, so there are Latin touches everywhere, including this green sauce. The fries were hot and crispy. They stayed crispy throughout the meal. The green sauce felt like a herby ranch situation where you sub out the dill.

I ordered the namesake Cowy Burger. They had a few options. I wanted to try the one they put their name on, at least the first time. It starts out like a pretty standard smashburger. It's got a potato roll, smashed beef, a house sauce, and melted American cheese. Like any ideal smashburger, the beef extends well past the bun. It's thin with crispy edges. The Cowy Burger also has griddled onions and bacon jam.

Most smashburger sauces are some blend of ketchup, mayo, and mustard, but I didn't get much ketchup in this sauce. It was creamy and a little tangy. It wouldn't surprise me if the base of the green sauce (minus the green herbs) and the Cowy sauce were the same. It gets interesting how it starts to play with the sweetness and smokiness of the bacon jam. The sweetness of the onions came with an unmistakable finish with herbs de Provence or a similar blend. The smashburger feels Miami and altogether different from the smashburgers you'll find anywhere. 

I still have a couple of days left in Miami. I'll be back on this block for at least one more burger. Sun, sand, and smasburgers. That's the new Miami.
