It was my last meal in London, just hours before I had to head to Heathrow. It's a natural wine bar that has a pork-heavy menu and I'm going through a natural wine phase. Tou had recently switched to reservations since they found themselves with consistently long lines. I made the booking before I got on the plane to London.
It's in the borough market complex so I walked around a bit before my reservation time. I always forget how crowded it is, especially on a Sunday. This Sunday was no different. I passed the time by exploring the market and having a beer at one of the pubs on the grounds. Then made my way over. It's a bit difficult to find since it's above a pub that you have to walk through to get there.
I made my way up the steps, gave my name, and got seated right away. It's a short menu and I wanted all of it. The wine list is pretty long but by the glass, there's only one of each type. I wanted the Pét-Nats and started with the white. It's a naturally fermented sparkling wine from South Africa called Testalonga I Wish I Was A Ninja. It was a dry wine but it had some sweet citrus notes.
I started with the Iberico Slider. It's a milk bun with a pork smash patty, onions, American cheese, pickled jalapenos, and a sweet kewpie-like mayo. It was pretty small, just a couple of bites but a lot was going on. The mayo and jalapenos gave it this spicy sweet flavor with a ton of umami from the smashed pork. I likely could have eaten 4 or 5 of these with no concerns.
The big platter of fries came very hot. They were skin-on and perfectly cooked with crispy outsides and fluffy insides. They came sprinkled with chili powder that blended beautifully with the salt. They were addictive. I didn't want to stop eating them and considered ordering more.
